Oil Symposium Draws Quick Service Operators, Suppliers

A global symposium on cooking oil use brought QSR operators, suppliers and industry experts to the Enodis Education and Technology Center to discuss improving food quality and health benefits.

Representing operations from Europe, Asia, the Middle East and North America, the team explored oil use, then discussed the relative food quality and health impacts of the oils. Participants from Frymaster and Enodis presented lab results demonstrating how fryer choice, burner and fry pot types, and oil management affect food quality, oil life and nutrition.

“All the information pointed to four factors directly related to better food quality and healthier frying results,” said Milt Hutchinson, vice president of technology and engineering at Frymaster. “To help operators improve results, Frymaster has condensed the findings into two reference guides. Frymaster’s 'Four Factors for Fit Frying' is a summary of practical tips. The Facts on Fit Frying is a scientific white paper complete with research findings and independent sources.”

The Four Factors for Fit Frying are:

  • Finding the right fryer. Certain fryer types and fry pot designs are best for specific applications. Frymaster offers a variety of fryers to optimise results.
  • Selecting the right oil. Nearly a dozen generally-available oil types can significantly affect food and nutrition results. Some have been demonstrated to lower “bad” cholesterol and improve the ratio of healthy cholesterol in humans.
  • Using best cooking practices and processes. Practical cooking and oil management processes will maintain oil quality, extend oil life, and reduce contamination.
  • Providing the right maintenance. Proper fryer maintenance keeps fryers functioning at optimum temperatures, with a direct impact on contaminant development in oil.
