Hotelympia to Witness Launch of UK's First Microwave Assisted Impinger Oven

Enodis UK set to launch the much-hyped Merrychef 402S on stand N3250 at Hotelympia 2006.

The first high speed microwave assisted impinger oven to be designed and produced in the UK with platform that is adaptable around the world, the 402S offers the flexibility of combination cooking with additional control over fan speed and microwave power.

A combination of convection heat, impingement pressure and up to 1500 watts of microwave power allows the 402S to cook 10-15 times faster than conventional convection ovens with typical cook times of 15 seconds to one minute 30 seconds.  And, a built-in catalytic converter eliminates the need for a ventilation hood so the oven can operate in virtually any environment.

The Merrychef 402S has been proven in heavy-duty daily use at select chain locations in the UK and in the USA.  The unit will complement the well-respected Merrychef line series.  More than 70,000 Merrychef accelerated cooking ovens are in use globally.

Talking about the technology behind the 402S, MerryChef managing director Graham Veal said:

 “The convection fan pulls in air through the grease filter which removes the majority of smoke from the air flow.  The air is then heated and returned to the cavity through impinger plates to produce an even heat pattern in the oven.” 

This heat layout minimises the areas where grease can build-up, allowing food to cook evenly to produce a crisp, golden finish.  

“Even though microwaves are used, this technology can use standard metal baking sheets and the impinger plates are easily removable to operate as a standard convection oven,” he added.

The 402S comes with the trademark Merrychef MenuKey® technology as standard.  Precise instructions for combination and convection cooking of selected items may be programmed into the oven’s memory.  The oven controls offer even greater flexibility with multi-stage programming.  Each programme offers up to eight stages, each with its own time, fan speed and microwave power settings.
